Ingredients

1 x gallon of water

1 x piece of ginger

1/2 cup soy sauce

1 x cup gluten flour (this is also known as 80% gluten or high gluten)

1-2 cup warm water

These ingredients make 2 lbs.

Method

1) A large pot containing the gallon of water with the soy sauce and the piece of ginger should bring to a boil. In the meantime:

2) While that is happening, mix the gluten and the 1-2 cups of warm water with your hands and until the mixture ends up being a sticky blob.

3) Next, you should run cold water over the stain and then knead it with your knuckles for about 3 minutes. Remember to change the water once it becomes cloudy. If the gluten is fresh, it will hold the dough together. If it is not fresh, the kneading will break it. In this case, just pick up the pieces and press them onto the stain.

4) Once the water has started to boil, cut the gluten into pieces (about the size of a finger) and place them in the fast-boiling water. This can cook for about 1 1/2 to 2 hours.

Keep in mind that seitan can be a substitute for meat in any recipe that needs it! (stew, stir fry, chili, etc.)
